In 1976, Cassandra Thomas made a sweet potato cookie to satisfy her new husband Jeffery’s sweet tooth, and in doing so, she created a legacy. 

In 1987, the Thomases debuted Cassandra’s sweet potato cookies at the Rosedale Park 30 Block Yard Sale. Within just three hours, they were out of cookies and onto something big.

Today, you can find the famous sweet potato cookie – along with an entire menu of pies, cakes, sandwiches, croquettes, soups, and more – at their bakery: Sweet Potato Sensations. 

Though you’ll find plenty of comforting and familiar recipes here, owner Espy Thomas is determined to be a part of the future as well—one reason she decided to enroll her business in DTE’s MIGreenPower program. 

“I want to be part of the revolution,” she says. “Change is a good thing!”

After enrolling for just $1 per month in 2025, Thomas remarked that other small businesses should consider joining the program. “If everyone has a small piece of the pie, we can lift it easier.”

DTE couldn’t agree more.
