Some collaborations seem like a natural fit. Others only show how special they are when you actually taste the food.
For just one weekend, Detroit favorites San Morello and Marrow teamed up for Pasta & Provisions, a special event that highlighted skill, seasonal ingredients, and the kind of thoughtful cooking that shows why local partnerships are important. As part of my First Bite series, I tried everything they offered, except breakfast. What I found was a menu that kept things simple but stood out thanks to great technique, top-notch ingredients, and a shared respect for good food.
The Rigatoni alla Norcina is a dish that stands out without being flashy. Made with Marrow’s seasonal ramp sausage, cream, and black truffle, the pasta had the balance you expect from great Italian food. The rigatoni was cooked just right, firm enough for the rich sauce. The ramp sausage brought an earthy, slightly sweet flavor that felt very Michigan and seasonal, and the black truffle added depth without taking over the dish.
What stood out most to me was the restraint. Creamy pasta dishes can sometimes be too rich and lose their flavor, but here, every ingredient mattered. The result was a dish that felt both special and comforting.
The wood-fired Pork Coppa Steak, served with grilled polenta and ragu di primavera, was top-tier, and you could taste why Marrow is becoming the go-to name in Michigan for first-class cuts. San Marello’s take on the pork had a smoky char on the outside and was tender and flavorful inside. It’s the kind of dish that proves simple ingredients, when handled well, are better than making things too complicated.
The grilled polenta added a nice texture, and the spring ragu di primavera brought brightness and freshness. Everything on the plate worked together, making the meal feel complete and well thought out. Each part fit together to tell a clear story of seasonal cooking.
This collaboration worked so well because both restaurants stayed true to themselves. San Morello kept its modern Italian style, while Marrow focused on whole-animal butchery, house-made items, and local ingredients. The partnership gave diners the best of both kitchens.
To round out the collaboration, San Morello and Marrow also partnered on San Morello’s June Pasta Club kit, a take-home experience designed to bring the collaboration into diners’ own kitchens. The box includes house-made pasta, Marrow’s ramp sausage sauce, accompaniments, dessert, and an optional wine pairing.
